This plot is a south-facing hillside located on the nearest land where the old monastery of San Cucufate was located.
The soil is calcareous clay and the planting rows are oriented north-south, giving rise to very good maturation achieving high levels of tannins and polyphenols, and therefore wines with a good aptitude for long aging.
ELABORATION
Variety 100% Tinto Fino (Tempranillo).
Manual harvest in boxes of 15Kg.
Grapes from the Monasterio plot, whose soil is clayey-calcareous and with limestone mother rock in the upper area.
Aged for 16 months in barrels of different uses and foudres of different sizes.
