Elaboration and Ageing:
After resting for a few days in the tank, fermentation begins. This process is exhaustively controlled, analyzing all the parameters. They use cylindrical stainless steel tanks, with a capacity of 20,000 litres, which favour the exchange of substances, extracting the best from each fruit. Malolactic fermentation is done naturally, and is also controlled by analysis.
Once the fermentation has finished, the wine is prepared for ageing in American and French oak barrels. Depending on the characteristics of each wine, our oenologist determines the necessary time, within the deadlines set by the Regulatory Council of the Denomination of Origin Ribera de Duero.
These barrels age with controlled temperature and humidity, respecting the strength and character of our wines.
