Must and skins ferment for 5 days in a 400-litre jar, then continue macerating for 2 more weeks.
Subsequent devatting and mixing. The final stay takes place in stainless steel tanks for 3 months.
CURIOSITIES
Trasconejao means "lost" and refers to the discovery of the mixture of these two varieties, since Garnacha Tintorera was a forgotten grape in a part of the plot.
