Another of the reasons, together with the quality of the San Juan vineyard, that the balance declined towards the village was the recovery of cement deposits to make the wine. The winery has more than 70 deposits of this material.
At Valsangiacomo we are convinced that, due to the characteristics of the bobal, the profile of the wine that we are making and want to show to the market, cement has to be very present to make bobal wines that show their typicity, respect the terroir and the characteristics that made the variety and the region famous long ago.

The origins of Cherubino Valsangiacomo go back to 1831, in Switzerland. That year, Vittore Valsangiacomo founded a winery with his name in Chiasso, in the Swiss canton of Ticino, near the border with Italy. It is the first family winery. At the end of the 19th century, his son Cherubino Valsangiacomo decided to open a wine export company in Valencia and Alicante, attracted by the logistical conditions of their ports and the excellent fruit of the land. Cherubino, like his father, names the wineries after him.
