Dehesa de los Canónigos sits on a farm in which beetroot, cereal, sunflower, Scots pine fields have alternated tilling and viticulture since 1987. The wine is made, after a careful and selected harvest, with the 88% Tinto Fino grape varieties and 12% Cabernet Sauvignon from vines that are about 40 years old. This wine is aged for 15 months in American oak barrels, medium toasted, fine grain, from one to two years of age, and another 15 in the bottle before going on the market.
Curiosities
Dehesa de los Canónigos is one of the great historical estates of the Ribera del Duero. Located in Pesquera de Duero, its name refers to the first owner, the Cabildo de la Catedral de Valladolid, made up of 22 canon monks. The different awards and the opinion of consumers have made the winery in the last 30 years one of the most prestigious wine brands in the Ribera del Duero.
