Caves Roger Goulart is a winery specialized in the elaboration of long aging cavas , which dates back to 1882. This year Magi Canals i Farre excavated the Cava Sant Jordi in the garden of his house, where later he would begin to make cava with the traditional champenoise method.

A strict selection of the best grapes from the best production areas, with the optimal levels of acidity to obtain very fresh base wines. Each variety is made separately. Before pressing, the grapes are subjected to a skin maceration at a low temperature. The pressing is smooth, obtaining only a 50% yield. After deboning, the must ferments at a controlled temperature, 16-18 ° C, with selected yeasts. Once the fermentation is finished, the coupages are made to carry out the tirage. After the second fermentation and a minimum aging of 9 months, when the deguelle is carried out, the expedition liquor is added, leaving the sugar level at approximately 8 g / liter.
