Development and aging
Prima is a coupage of the Tinta de Toro (90%) and Garnacha (10%) varieties. The grapes come from vineyards between 10 and 35 years old, owned by the winery, which grow on clayey and sandy soils. The two varieties are vinified separately so that the essence of each payment is not lost.
The temperature differences between day and night are large, which makes the wine have great aromatic power.
Aging is 14 months in French and American oak barrels.

With the wines that bear the name of San Román, Bodegas Mauro expanded its activities in Toro lands at the end of the 1990s.
The interest of the García family in Toro began in 1995 with the monitoring of different plots of old vineyards in the northeast of the Denomination of Origin. In 1996, the first vineyards and land were purchased to consolidate the project in the Valladolid towns of Pedrosa del Rey, Villaester and San Román de Hornija. In 1997, the winery was inaugurated in Pedrosa del Rey and, a few years later, the vineyard area was expanded in Morales de Toro.
San Román Bodegas y Viñedos is the second winery owned by Mariano García and his family in the Duero Valley, started after Bodegas Mauro (1980), and continued by Garmón Continental (his exclusive new project in Ribera del Duero that started with the 2014 vintage). ).
