Preparation and Aging
In mid-September the harvest begins where the grapes are picked manually in 20 kg boxes with rigorous control at reception.
Maceration of the grapes for 6 hours at a temperature of 8 ºC.
Fermentation of the must in stainless steel tanks for two to three weeks at a controlled temperature.
The musts from each estate ferment separately and after resting for 3 months
with its own lees, we proceed to "coupage"
