Elaboration and Aging:
The Puntido Is a monovarietal of Tempranillo . The grape comes from vineyards planted at a height of 600m on loamy-loamy soils, on the estate El Puntido. The 25-hectare vineyard was planted in 1975. It supports an Atlantic climate with continental influences. Manual harvesting and a double table selection, in which the best clusters and the best grains are selected. The fermentation in deposits of stainless steel during 8-10 days at a controlled temperature of between 28 and 30 ºC. During the fermentation 2 or 3 remontates are made daily during the first days, to finish with a daily remontado. Finalized the Fermentative process the wine is allowed to marinate for 3 weeks. Finally one Aging in new French oak barrels of 18 months, In which the wine is raised with its lees during the first 4 months.
