Elaboration and Aging
The grapes used by Finca Monasterio come exclusively from a single vineyard, planted in 1985, located around a Benedictine monastery founded in the sixteenth century that is located in the town of Mendavia in the Rioja Baja. After the corresponding harvesting and harvesting processes, carried out according to the conventional methodology, the Finca Monasterio wine is raised during 18 months in new French oak barrels . After this phase, this wine rests during 6 months more in "foudres" of 10,000 liters of French oak . Ultimately, Finca Monasterio is bottled without being filtered or stabilized, a fact that can cause the sediment of natural origin to remain in the bottle.
