ELABORATION
The wines intended for the elaboration of the Reserva come from vineyards in which the average age is 40 years old and which, after their elaboration, are tasted and the most suitable type of wood for their aging is defined.
Variety 95% Tempranillo and 5% Graciano.
Average age of the vineyard: 40 years.
Selection of bunches on the table.
Aging in two stages: 12 months in French oak barrels and 6 months in American oak.
CURIOSITIES
In 1994 he opened a modern winery equipped with the best production systems. It mainly produces Crianza, Reserva wines of the highest quality. The new winery was complemented with new and successive extensions, such as another new production area that came into operation for the 1998 harvest and a new barrel warehouse opened in 1999 and where 2,000 new barrels are housed.
By the end of 2006, a new phase of 4,500 square meters was completed to improve the grape reception area. There is now a vibrating reception hopper for the grapes destined for the LUIS CAÑAS CRIANZA Y RESERVA, two new manual selection tables and a grain selection system. There is an area to make HIGH ESSENCE wines where the usual cluster selection table has been completed with a new phase where the grains are selected, being one of the first wineries in Spain to have this system called Mistral.
Likewise, there is a new and modern production area with the most modern manufacturing systems: tanks with independent temperature control, automatic pump-overs, self-emptying, etc.
