Production and Aging:
A great wine that will undoubtedly delight the most demanding. Made with 85% Tempranillo, 10% Graciano, 5% Viura and Malvasia of vineyards spread over six towns in the Sierra Cantabria : Samaniego, Leza, Elciego, San Vicente de la Sonsierra, Laguardia and Ábalos. The harvest was with manual harvesting of grapes in boxes of 12 kilograms. The vinification was carried out at a controlled temperature prior to fermentation in specially designed cold rooms for a period of 24 hours (at between 4 and 6ºC). Selection of grapes on the table. Destemmed cluster shoulders. Fermentation in 7000 liter French oak vats. Malolactic in new barrel. The upbringing was 27 months in oak barrels (95% French and 5% American).
