Tasting notes:
Deep cherry red colour, quite dark and dense.
High aromatic intensity of candied black fruits such as plums, blackberries and cassis, spicy aromas such as cinnamon, pepper and clove, with well-integrated new wood notes.
Excellent structure in the mouth with a lot of intensity, creamy, with a large amount of fruit well balanced with fine and sweet tannins. The aftertaste is long, creamy and very persistent.
Elaboration and Ageing
Made from the Tempranillo (90%), Graciano (5%) and Viura and Malvasía (5%) varieties from average 60-year-old vines. An innovative production system, which consists of introducing into the tank a membrane bag filled with water, to squeeze the skins thus releasing 70% of the wine, which they still contain and getting a wine with a marked expression of fruit at its peak of maturity. The subsequent aging is 22 months in new French oak barrels.
Curiosities
Founded in 1989, Bodegas Remírez de Ganuza was born as a personal commitment of its founder, Fernando Remírez de Ganuza. From the beginning the idea has been the same: to make an exhaustive selection of the grape and to intervene as little as possible in the winemaking process in order to be as faithful as possible to both the vintage and the vineyard.
Over the years, elements have been incorporated into the winemaking and ageing process that make Remírez de Ganuza a pioneer in the application of new techniques. Innovation from the beginning has been a constant, as year after year improvements are incorporated to raise the quality of the wines. Elements such as the selection table, cold chambers or the use of new barrels for the ageing of wines, may be common today in other prestigious international wineries, but they were not at the time they were applied. Other elements such as the bag used to extract the Trasnocho or the machine used to wash the grapes with its own must are examples of the continuous innovation and search for quality carried out at Remírez de Ganuza.
