PRODUCTION
The must fermented with the native yeasts in 228-litre Burgundy-style barrels. Afterwards, the wine remained unracked in French oak barrels, where it completed a 10-month aging on its lees, with periodic batoning. It was bottled in summer.

Capitel is made with the oldest and most unique Verdejo vines located in the small plot of Peña Aguda, in Nieva. The roots penetrate between the slate sheets and extract extraordinary mineral strength from them.
