Fernando de Castilla Classic Amontillado is made from the Palomino grape. The must is headed at 15 degrees so that it has a biological aging of flor veil. It is introduced into the criaderas and soleras system for 4 years. Then it is returned to 18 degrees so that the veil of flor disappears and the oxidative aging begins, which will last another 4 years.
