Ferdinand of Castile It is a small century-old winery headed today by a young team that has wanted to maintain the family character of the company. Although it began making brandy from Jerez, it currently produces a wide range of mid- and high-range products.

Grape type: 100% Pedro Ximénez
Type of aging: The previously sunny Pedro Ximenez grapes are pressed and left to begin fermenting and at the beginning wine alcohol is added up to a final graduation of 15%. Since its fermentation has not been completed, a large part of the sugars of the grapes remain present in this must, which goes on to its traditional aging system of soleras and criaderas.
