ELABORATION
The Palo Cortados are one of the most special wines within the Denomination of Origin Jerez-Xèrés-Sherry. This is because, despite the fact that its production process is a physical-chemical process of oxidative aging like an oloroso, the result is not an oloroso, but rather its organoleptic characteristics place it between an amontillado and an oloroso.
The vinification is carried out in the winery owned by Bodegas Barbadillo in Viña Gibalbín. Subsequently, the wine is transferred to the cellars of Sanlúcar de Barrameda, where they follow the classic aging processes until they are bottled at the company's facilities.
Aged for 15 years with the Criaderas and Solera system.

Bodegas Barbadillo traditionally vinifies vineyards located in other areas of Marco de Jerez through long-term contracts with external winegrowers.
